Head Chef, Rigels Tufa, for Con Gusto Catering remarks, “our chefs can often be found carefully choosing fresh fist at 3:30am when Billingsgate Market first opens. Arriving on time allows for first choice of the night’s evening catch by the fishermen. One can find live eels, langoustine and hand dived scallops caught only a few hours earlier. Such singularly fresh ingredients is the life and soul of our chefs dishes, as only with such fresh ingredients can real magic be made.”
Sashimi-grade yellow tale tuna and hamatchi are just some of the fish which trained sushi masters transform in the morning into delicate sashimi designs, carefully crafted into flowers and forms then finally decorated with fresh tobiko. In the above photo you can see chef Rigels preparing a much loved by our clients classic: salmon gravadlax sushi with avocado and topped with wasabi mayonnaise and black tobiko.
